Eighty Sixed

86'D, all of us in the service and food industry knows what this means, its when the restaurant runs out of an individual item. Now its ok when you have five different kinds of fish on the menu, and one of them is sold out, you can always recommend one of the other fish dishes. But when its the dish your restaurant is known for like a pan-seared barramundi that sits on a bed of sauteed spinach, you're in for a long night.

It doesn't matter that you have 50 different items on the menu, everyone that night will be coming in for that specific dish. You will have to try and sell them the salmon or halibut, but they always give you that blank stare. You know the one.


 For the rest of that tables stay you do everything in your power to make that table happy. their drinks never go less than 1/4 empty. You pre-bus every empty plate. You make small talk. You offer dessert. Everything seems to be going perfectly, but all you can think about in the back of mind is, "I hope the guest that wanted the barramundi isn't paying the bill."

You go to drop off the bill as far away from the barramundi guest as possible, but he puts his hand out anyway. All you think is. "@#$%." I hope he liked my suggestion and I get at least 10%. You go to pick up the check after they leave and you can't even look at it, so you have a fellow server open it for you. The server says, "I'm so sorry," and they hand you book, You open it, and it's 20%. You worried for nothing.
